During my last grocery visit, I got a bag of Almond Flour from Costco and from ever since I have been trying out different recipes with that. I have to say, am becoming a fan of this flour.
These cookies are the most simplest and super delicious and a treat whether you are GF or not!
These are the basic version and you can add in more flavor as per your wish. I have given some variations in the notes section.
Makes 9
Ingredients Required:
Almond Flour - 1 cup
Butter - 3 tblsp
Sugar - 3 tblsp
How to make?
- In a mixing bowl, combine all the ingredients and start crumbling with your finger tips.
- Combine the dough together and do not knead.
- Make 9 equal size balls, gently press between your palms to form a thick disc
- Make an indent with a fork (optional!)
- Bake in a preheated oven at 350 for 8-10 minutes
- Cool and serve
Notes:
- Add in 1/4 cup of coconut flour with 3/4 cup almond flour for coconut almond cookies
- Add in some orange or lemon zest for some citrus-y flavored cookies
- Throw in some chocolate chips for chocolate chip gluten free cookies
- Throw is some nuts or dried fruits - cranberries, walnuts, raisins etc
