Chocolate Ice Cream - Eggless and no churn!

Okay so my ice cream experiments continue and this week it was my son's all time favorite - Chocolate Ice cream. 
After I started making ice cream at home, I have not bought them as they are super easy to make with minimum ingredients, and you get the pleasure of making them from scratch - a feel of accomplishment when you see your kids lick the bowl clean :)



Ingredients Required:
Whipping Cream - 2 cups
Milk - 1 cup
Sugar - 1/2 cup
Cocoa powder - 1/2 cup
Semi Sweet Chocolate chips - 1/2 cup
Vanilla Extract - 1 tsp

How to make?
  • In a large mixing bowl, add in the whipped cream. Beat with a electric mixer till stiff peaks.
  • In a blender, add the milk, sugar, and cocoa powder and blend till well incorporated.
  • Add in this mix to the whipped cream along with vanilla extract.
  • Give a gentle fold with a spatula till well incorporated. You can also use the electric mixer at low speed to combine. Do not overdo else the stiff peaks will dissolve.
  • Add in the chocolate chips and fold gently.
  • Pour into a freezer friendly container and cover.
  • Freeze for 8 hours before serving.

Notes:
We like our ice cream less sweet to get the cocoa flavor. Please do a taste test before freezing and if required add more sugar to your liking.
Please make sure to use good quality cocoa.
