Simple Vanilla Cake | Tea Cake | Eggless

This is like a basic vanilla cake recipe that can be used as a base. This also reminds me of the tea cake that I used to get back home in India. These are frosting less cakes with a mild vanilla flavor that makes a great accompaniment to tea or coffee or just as is! Super easy to make and bake - one bowl recipe.



Makes 1 small loaf

Ingredients Required:
All Purpose Flour - 1 cup
Corn Starch/Milk Powder - 2 tblsp
Sugar - 1/2 cup
Butter - 4 tblsp
Oil - 1 tblsp
Yogurt - 2 tblsp
Milk - 3/4 cup (warm)
Baking Powder - 1 tsp
Baking Soda - 1/2 tsp
Vanilla extract - 1 tsp

How to make?
  • Pre heat the oven to 350. Prepare the cake pan - either line with parchment paper or grease with butter. Set aside.
  • In a large mixing bowl,  add the wet ingredients - Sugar, butter, oil, yogurt, vanilla extract - Mix well till light and creamy. You can use a electric beater as well.
  • Add the warm milk and mix.
  • Add in the flours, corn starch or milk powder and the baking powder and soda.
  • Fold in gently till well incorporated. Do not over mix.
  • Pour in the pan and tap flat.
  • Bake for 25 mins and test if a tooth pick comes out clean when poked in the center,
  • Cool for 20 minutes. Slice and serve

Notes:
  • If the batter is dry, you can add 1 tblsp more milk.
  • Sugar was just perfect for us and we like it a little less on the sweeter side. If you like more sweetness, do increase the sugar to 3/4 cup.
