Vegetable Fried Rice

This is a super simple recipe that can be put together in a jiffy. And is always a hit among the kids. I used to remember as a kid, whenever we used to go out to eat, I always order this vegetable fried rice and used to love it. This goes well with any Manchurian or a simple tomato ketchup. This makes a great lunch box meal for the kids as well.
Recently I made this rice for a couple of potlucks, and it was liked by all.

Serves - 2-3
Ingredients Required:
Basmati Rice - 1 cup, soaked for 30 minutes
Sesame Oil - 1 tblsp
Rice Vinegar - 1 tsp
Salt - to taste
Pepper - to taste
Sugar - 1 tsp

Ginger - 1 inch, finely chopped
Garlic - 2 cloves, finely chopped
Spring Onions - 2 springs - finely chopped
Beans - 5 - Finely Chopped
Carrot - 1, finely chopped
Bell Pepper - 1/2, finely chopped (I used green, red, and yellow)

How to make:
  1. Boil 8 cups of water with 1 tblsp of salt, and add the soaked rice. Cook for 4-5 minutes till 90% done, strain the water and set the rice aside.
  2. In a large wok or skillet, heat 1 tblsp of sesame oil on high heat.
  3. When hot, add the ginger, garlic and spring onions. Fry for a minute.
  4. Add the carrots and beans. Fry for 2 minutes.
  5. Add the bell peppers. Add salt and sugar. Fry for a minute.
  6. Add the rice, toss well.
  7. Add rice vinegar, and pepper. Give a final toss and ready to serve.
  8. Serve with a simple Ketchup or any manchurian gravy.

Notes:
  1. Sesame oil adds to the flavor and substituting this with any other oil does not provide the same taste
  2. All the cooking should be done in high heat so the vegetables maintain their crunch
  3. Adding sugar after the bell pepper, makes the bell pepper not lose its color to the rice.
