Mint Rice

This is a simple recipe that makes a great lunch or a lunch box meal. It is packed with mint flavor and goes well with raita of your choice.



Serves - 2-3
Ingredients Required:
Rice - 1 cup
Fresh Mint leaves - 3/4 cup packed
Cilantro - 1/4 cup packed (leaves and tender stem)
Channa Dhal - 1 tblsp
Coriander Seeds - 1 tsp
Kashmiri Chilli - 3
Coconut - 1/4 cup
Hing - Pinch
Salt - to taste
Coconut Oil - 1 tblsp
Sesame Oil - 1 tblsp

How to make?
  1. Wash and cook the rice with 1.5 cups water in a cooker for 3 whistles.
  2. Cool the rice by spreading the grains and drizzle a tblsp of sesame oil.
  3. In a pan, heat coconut oil, add the channa dhal, coriander seeds, chilli and fry for a minute on medium heat.
  4. Add the mint leaves and cilantro and saute.
  5. Add the coconut and give a quick mix and let it cool.
  6. Grind to a coarse paste along with salt and hing
  7. Mix this paste to the rice and fluff up with fork
  8. Serve with raita of your choice.

Notes:
  1. If you do not have Kashmiri chilli, then just use 1 chilli - can be red or green. Kashmiri chilli just provide color and are less spicy.
