Vegetable Lasagna with white and red sauce

I have already posted a recipe for vegetable lasgana which  does not use white sauce but instead uses cream cheese and marinara. This version uses home made white sauce.
There are various ways to make a lasagna and it depends on your liking. This is one of the way we like it as it is less creamy.
The vegetables that I have used is what I had today, but feel free to throw in any of your choice as per your liking.

I have used traditional lasagna sheets where it requires to be cooked prior to baking. If you are using no cook sheets, follow the instructions on the box.

Makes - 1 9x9 inch pan
Ingredients Required:
Lasagna Sheets - 9 (or as required that fit your pan)
Marinara Sauce - 1 bottle
Olive oil - 2 tblsp
Mozzarella Cheese  - 3 cups, shredded

Vegetables:
Broccoli - 2 cups
Spinach - 1 cup
Bell pepper - 1 of each color (red, yellow, green)
Zucchini  - 1 
Onion - 1 
Spring Onions - 1/4 cup, finely chopped
Garlic - 1 tblsp, finely chopped

White Sauce:
Butter - 2 tblsp
Flour - 2 tblsp
Milk - 2 cups
Salt - to taste
Pepper - to taste

How to make?
  • Cook and set aside the lasagna sheets as per instructions on the box
Vegetables:
  • In a pan, add olive oil and when hot add the onions, garlic and spring onions. Saute for a minute
  • Add in the bell peppers. Saute.
  • Add in the Zucchini. Saute.
  • Add in the Broccoli. Season with salt and pepper. Close and let cook for 2 minutes.
  • Set the vegetables aside.
White Sauce:
  • In a pan, add the butter and allow to melt on medium heat.
  • Add the flour and cook for 2 minutes, till the flour is cooked and the raw smell goes away
  • Slowly start adding in the milk and keep stirring with a whisk so lumps are not formed.
  • Allow to cook for a couple of minutes till the mixture thickens.
  • Season with salt and pepper
How to Assemble:
  • In a baking pan, season with olive oil
  • Add couple of spoons of marinara sauce to cover the base and drizzle with white sauce
  • Place the lasagna sheet to cover the surface
  • Add some more marinara sauce and white sauce to cover the sheets
  • Cover the sheets with half the vegetables, spread evenly
  • Top it up with shredded cheese 
  • Again add another layer of lasagna sheets. sauce, vegetables and cheese
  • Place the final layer of lasagna sheet
  • Cover it with marinara and white sauce
  • Top it up with cheese so the full surface is covered
Baking:
  • Cover it with a foil and bake for 30 minutes at 350.
  • Open the foil and bake for 10 minutes
  • Broil for 5 minutes
  • Cool for 5 minutes before cutting
  • Slice into squares and serve hot

Alterations:
There are various ways to make a Lasagna and the fillings can be modified each time to your liking.

1. Mix the white and red sauce together to make it with pink sauce
2. Mix Ricotta or Cottage Cheese  with the vegetables for the filling for a more creamy version
3. Explore with other vegetable combinations of your choice!
4. I recently tried the Lasagna with no bake sheets and they worked like a charm - never going back to traditional sheets. Make sure to leave the lasagna out before baking for 30 minutes so the liquid soaks the sheets and it cooks perfectly.
