Arisi Thengai Payasam | Thirukanamudhu

This sweet dish is made with raw rice and coconut. Usually made on festive days as an offering to god. Adding milk is totally optional, and I have not added it. Skip the ghee to make it vegan!


Serves 4
Ingredients Required:
Grated Coconut - 1/2 cup
Raw rice - 3 tlsp
Cardamon - 1 tsp
Jaggery - 1/2 cup
Ghee - 1 tblsp
Almonds/Cashews - 2 tblsp (chopped)

How to make?
  • Soak the rice for 30 minutes
  • Grind the coconut and rice to a coarse paste
  • Boil 2 cups of water and add the ground paste along with cardamon
  • Cook for 10 minutes on medium flame till the rice is cooked
  • Add the jaggery and cook till the jaggery dissolves
  • If required add more water, should be a flowing consistency
  • In a pan, heat ghee and fry the nuts
  • Garnish with the fried nuts and serve hot

Notes:
  • Adding milk is totally optional, as you see I have not added. If you would like you can add 1/4 cup milk at the end. Boil milk separately, cool down and then add. If you add hot milk or boil after adding raw milk, it might curdle with jaggery
  • Drizzle a tsp of ghee before serving
  • Quantity of jaggery depends on the your sweetness level and the sweetness of the jaggery
  • For a vegan version, skip the ghee altogether and fry the nuts in coconut oil
