This is a festive dish usually made on Tamil New Years day and Avani Avittam. Raw Mango is cooked with jaggery. This is a very special dish since it has all the flavors - sour, sweet, salty, bitter and spicy.
Ingredients Required:
Raw Mango - 1, chopped into cubes
Jaggery - 1/4-1/2 cup
Salt - to taste
Veppam Poo - 1 tsp
Rice Flour - 2 tsp
Ghee - 1 tblsp + tblsp
Mustard Seeds - 1 tsp
Red Chilli - 2
Curry Leaves - few
How to make?
- Cook the mangoes in 1 cup of water till well done
- Add the jaggery and continue cooking, till the jaggery dissolves
- Dissolve the rice flour in a tblsp of water, and add this slurry to the pachadi
- Allow to come to a boil, this will thicken the mixture
- Add salt as required
- In a pan, add 1 tblsp of ghee and add the veppam poo, fry for a minute and add this to the pachadi
- In the same pan, add another tblsp of ghee and add mustard seeds and on spluttering add the red chilli and curry leaves. Add this seasoning to the pachadi
Notes:
- Amount of jaggery depends on the sweetness of the mango and your preference
- You can use raw mango or partially ripe mango for this recipe, when using partially ripe mango reduce the amount of jaggery accordingly to your preference
