Paruppu vadai is made with channa dhal and spiced with very minimal spices like red chilli and curry leaves. Simple snacks and usually made for tea time or on any festive day.

Ingredients Required:
Channa Dhal (Kadala Paruppu) - 1.5 cups
Red Chilli - 4
Curry leaves - 10, chopped
Coriander leaves - 1/4 cup, finely chopped
Oil - for deep frying
Salt - to taste
Hing - pinch
How to make?
- Soak the dhal for 3 hours along with red chilli
- Grind to a coarse mixture along with salt
- It is fine if some of the dhal is still whole, it would give a nice bite
- Add in the curry leaves, coriander leaves and hing
- Heat oil on high heat and then when hot, reduce to medium
- Take a lime size ball and gently pat between palms to a medium thickness disc shapped
- Drop in the oil and fry for 3-4 minutes till golden brown
- Drain from oil and serve
