This is a flavourful Thai curry and our usual order in any of the Thai restaurants. Very simple to make with the Thai curry paste or sauce available in the market. Can be add with a bowl of rice or Quiona.
Serves 4
Ingredients Required:
Thai Yellow Curry sauce - 1 cup ( see notes)
Vegetable stock - 1 cup
Broccoli - 1/4 cup florets
Potato - 1, peeled and diced into cubes
Cauliflower - 1/4 cup florets
Carrots - 1, peeled and sliced
Squash - 1, peeled and diced into cubes
How to make?
Take a pot with water to boil the vegetables.
Boil them one by one with salt, drain and set aside.
Take a pan and add the yellow curry sauce alone with vegetable stock and 1 cup water
Bring to a boil and add the boiled vegetables
Close the pan and cook on medium heat for 5 minutes
Serve hot garnished with rice or Quiona
Notes:
You can buy the Thai Yellow Curry sauce in any of the grocery stores under the Asian or international aisle. I got mine from Trader Joe's.
If you get the curry paste instead, just add 1 cup coconut milk to the required amount of paste and them follow the above recipe.
You can add vegetables of your choice.
You can add fried or steamed tofu.
