Fig and Honey Ice Cream - no sugar added



This is a very different flavored ice cream with dried fig and honey, with no added sugar. I had this unique flavor back in India, in a ice cream place called Ibaco. They had the most unique flavors and this being one of them. I have been wanting to try their flavors at home and this is the first one.
Consider this to be a healthier version of Ice Cream since it is loaded with fig and sweetened with only honey.

Ingredients Required:
Whipping Cream - 2 cup (Cold)
Whole Milk - 1 cup
Honey - 1/2 cup
Dried Fig - 20

How to Make?

  • Soak the fig in the milk for 2 hours
  • In a large mixing bowl, take the whipping cream. Start beating it with an electric whisk till you get stiff peaks. Will take ~5 minutes.
  • Blend the soaked fig with the milk to a coarse paste.
  • Add the fig paste and the honey to the cream
  • Give a quick mix for a minute with the whisk
  • Transfer to a freezer friendly bowl, and freeze for 8 hours
  • Scoop and serve with a drizzle of honey!
