This is a mildly spiced creamy side dish made with vegetables and paneer simmered in cashew tomato sauce and spices. Serve this with any type of rice, roti or paratha.
This can be made without onion garlic as well. Just skip those and follow the other ingredients mentioned.
Serves 4
Ingredients Required:
Onion - 1, roughly chopped
Tomato - 3 , roughly chopped
Ginger garlic paste - 1 tblsp
Cashews - 10, soak in water for 30 minutes
Almonds - 5, soak in water for 30 minutes
Cumin Powder - 2 tsp
Coriander Powder - 2 tsp
Kashmiri Chilli Powder - 1 tsp
Garam Masala - 2 tsp
Salt - to taste
Kasturi Methi - 1 tsp
Butter - 2 tblsp
Oil - 2 tblsp
Cream - 4 tblsp
Vegetables:
Beans - 1/4 cup, chopped
Green Peas - 1/4 cup
Carrot - 1/4 cup, chopped
Cauliflower - 1/4 cup, small florets
Potato - 1/4 cup, chopped
Paneer - 1/2 cup, cubed
How to Make?
- Boil the vegetables with salt till 80% cooked and set aside.
- In a pan, add the oil and when hot add the onion and ginger garlic paste. Saute till golden brown.
- Add the tomato and close the pan. Allow to cook for 5 minutes till the tomatoes are mushy.
- Set aside and allow to cool.
- Grind the soaked almonds and cashews to a smooth paste. Set aside.
- Grind the onion tomato to a smooth paste and set aside.
- In the same pan, add the butter and when hot add the spice powders - garam masala, cumin Powder, Coriander powder, chilli powder and kasturi Methi. Saute for 2 minutes.
- Add the tomato paste and saute till the oil leaves the sides.
- Add the cashew almond paste and continue sauteing for 2 more minutes.
- Add 1/2 cup water or to your desired consistency. Bring to a boil.
- Add the vegetables and paneer.
- Close the pan and allow to cook for 5 minutes so the vegetables soak in the flavor.
- Add salt as required.
- Add cream just before serving.
- Garnish with chopped cilantro.
Notes:
For no onion no garlic version, just skip the onion and garlic and add an extra tomato with more ginger.
You can skip the cream altogether or substitute with half and half or milk.
