This is our usual weekend recipe along with sambhar or mor Kuzhambu. Tastes well with baby Potato but can be made with normal potatoes cubes to this size as well.
Ingredients Required:
Baby Potato - 3 cups
Oil - 2 tblsp
Salt - as required
Turmeric powder - 1 tsp
Chilli Powder - 1 tblsp
Mustard seeds - 1 tsp
Hing - pinch
Curry leaves - few
Cilantro - finely chopped for garnish
How to make?
Boil the potatos till cooked al a dente. I usually keep one whistle in the pressure cooker.
Peel and set aside the potatoes.
In a heavy bottom pan, (tastes best with cast iron pan) add the oil and when hot add the mustard seeds and allow to splutter.
Add the curry leaves, hing, turmeric, salt and chilli powder. Saute for a minute.
Add the peeled potatoes to this spice mixture and give a toss on high heat.
Roast for 5-10 minutes with constant stirring to ensure it roasts on all sides.
Garnish with chopped cilantro and serve hot.
Notes:
Tastes best with baby potatoes but you can use normal potatoes as well. After cooking and peeling cube them into desired size and the follow the recipe.
