This is a simple restaurant style soup made with just one main ingredient - sweet corn. Very quick to make and is a one pot recipe.
Serves 2
Ingredients Required :
Sweet Corn Kernals - 4 cups ( I have used frozen)
Salt - as required
Pepper - 1 tsp
Cream - 1 tblsp (optional)
How to make:
Boil the sweet corn Kernals till well cooked. Since I was using frozen I just needed to boil for 5 minutes. If you are using fresh, you can pressure cook them to speeden the process.
Drain and allow to cool.
Make a smooth puree by adding 1 cup of water.
Strain them to remove the corn husks and also to get a smooth texture.
Boil the puree for a few minutes till hot, granish with salt and pepper.
Serve with a garnish of spring onions and a drizzle of cream.
