Keerai Vadai

This is Vadai made with urad dhal and loads of spinach. Serve with coconut chutney and a hot cup of chai. Makes a great appetizer or evening snack.

Makes 10
Ingredients Required:
Urad dhal - 1 cup
Channa dhal - 1/4 cup
Spinach - 2 cups, finely chopped
Green chillies - 2, finely chopped
Ginger - 2 inch, finely chopped
Salt - as required
Cumin seeds - 2 tsp
Oil - to deep fry

How to make?
  • Soak the urad dhal and channa dhal together for 2 hours.
  • Grind to a coarse thick paste with no water.
  • Take this ground paste in a mixing bowl and add the spinach, ginger, green chilli, cumin seeds and salt. Mix well
  • Heat oil in a pan in high heat and when hot, reduce the flame to medium.
  • Take a plastic sheet (ziploc bag) and start taking a large lemon size and patting it into a disc shape. Make a hole in the center.
  • Gently peel this and drop it in the oil.
  • Drop as many vadais that your pan can hold at one shot.
  • Fry till golden brown on both sides. Usually takes 10 minutes.
  • Drain and serve hot with coconut chutney

Notes:
  • I use sunflower oil for deep frying.
  • Make sure not to add any water while grinding else the mixture would be too watery and you would not be able to make the shape
  • Wet your hands in water before taking a ball size to make the shape. Wetting your hands does not make the dough does not stick to your hand.
