Kothamalli Saadam - Cilantro Rice

Simple lunch box menu made with cilantro leaves and spices. Serve with raita to complete your meal. We usually have this with either tomato or cucumber pachadi.
Serve - 3
Ingredients Required:
Rice - 1 cup
Oil - 1 tbspl + 1 tsp
Green chilli - 2
Curry leaves - few
Urad dhal - 2 tsp
Channa dhal - 2 tsp
Tamarind - 1 tsp
Shredded Coconut - 2 tblsp
Cilantro - 1 bunch, roughy chopped with stems
Salt - to taste
Mustard seeds - 1 tsp
Hing - to taste

How to make?
Cook the rice with 2 cups water and cook such that the grains are separate. Set aside and cool.
In a pan, add the tbslp of oil and when hot add the urad and channa dhal.
Roast till golden brown.
Add the green chilli and curry leaves
Add the cilantro leaves, coconut and saute for a minute till the leaves are cooked for couple of minutes.
Cool till room temperature and grind to a paste with minimal water along with the tamarind.
Mix this paste with the rice and season with salt.
In a pan add the tsp of oil and when hot add the mustard seeds and hing. Add this to the rice and mix.
Serve with raita or pachadi of your choice.
