Akki Roti is a karanataka speciality dish made with rice flour. You can serve with any Chutney of your choice. Add in some vegetables to enhance the flavor.
Ingredients Required:
Rice flour - 1 cup
Water - 1 cup
Salt - to taste
Cumin seeds - 1 tsp
Cilantro - 1/4 cup finely chopped
Carrot - 1, grated
Onion - 1 finely chopped
Green chillies - 1 finely chopped
Ginger - 1 inch piece, finely chopped
Coconut Shredded - 2 tblsp
Oil - to cook
How to make:
In a mixing bowl, add the rice flour and all the other ingredients other than water.
Mix well.
Boil the water and slowly start adding the hot water and knead into a soft dough.
You might not need all the water depending on your rice flour. So add slowly till you reach dough like consistency.
Heat a tawa and brush with oil.
On a ziploc or plastic sheet or vaazhai illai, grease with oil.
Take an orange size ball, roll it and place on the sheet.
Slowly start flattening it with your hand into a circle shaped 1/4 inch thickness.
Make a hole in the center.
Gently peel the roti and place on the hot tawa.
Drizzle oil around and close the pan.
Allow to cook for a minute and then flip to cook on the other side.
Cook for a minute and then remove on to a plate.
Notes:
Another method of making is directly placing the ball of dough on the hot tawa and press into a circle and make a hole in between.
Be careful as the tawa would be hot.
