Carrot Halwa

This is one of my most favorite sweet. The carrots are grated finely and simmered in milk and sugar till well cooked and you get Halwa consistency. The best taste is achieved by using the red carrots. But I don't get those here so have used organic orange ones. 
Some people use khoya or paneer in this recipe. I do not. The taste is achieved just with carrots milk and sugar. To quicken the process you can substitute condensed milk with milk and sugar.
Please be aware that this recipe will contribute for your arm workout for the day and you would have to grate the carrots and then constant stirring the Halwa. If you have a food processor this is a good time to take it out.


Ingredients Required:
Carrots - 5 cups, grated finely
Whole milk - 2 cups
Sugar - 1 cup
Cardamon - 2 tsp
Saffron - 1 pinch
Ghee - 1/4 cup 

Garnish:
Ghee - 2 tblsp
Almonds/cashews - 1/4 cup chopped

How to make:
In a heavy bottom pan, add 2 tblsp of ghee and the carrots.
Saute the carrots till they are half cooked.
Add the milk and keep stirring and let summer for close to 30-40 minutes till the mixture reduces and the carrots are cooked.
When some milk is still there add the sugar and keep stirring.
After another 20 minutes the mixture would have thickened.
Add the cardamon, and saffron.
Add the remaining ghee and continue stirring for another 10 minutes or until the ghee leaves the sides.
Garnish with the ghee roasted nuts and serve.

Goes best with Vanilla Ice Cream.

Notes:
If using condensed milk, use just half cup of milk initially to cook the carrots and then add a can of condensed milk and continue cooking. This would cut the cooking time by half.
If you cannot grate till the end of the carrots, you can just blend them with milk and add them.
