Gongura Rice

Here is another quick fix mixed rice that can be made for lunch and makes a great lunch box menu. Serve with raita of your choice.
This is made with Gongura leaves that you can get in your local Indian store. It is called pulicha keerai in Tamil.

Ingredients Required:
Gongura leaves - 1 bunch, just the leaves
Sesame Oil - 1 tbspl
Coriander seeds - 1 tblsp
Channa dhal - 1 tsp
Urad Dhal - 1 tsp
Red chilli - 4
Hing - pinch
Curry leaves - handful
Salt - to taste

Rice - 1 cup

How to make:
Cook the rice with 2 cups of water for 10 minutes in the instant pot or 3 whistles in the pressure cooker. 
Spread the grains on a plate and allow to cool so they do not stick together.
In a pan, add the oil and when hot add the coriander seeds, channa and urad dhal. 
Fry till golden in color.
Add the chilli, hing, curry and gongura leaves.
Saute till the leaves wilt.
Cook and grind to a paste with salt and 2 tblsp if water.
Mix this paste to the rice and add salt if required.
Drizzle some sesame oil and serve with raita of your choice.
