Kathirikai Thogayal

Thogayal made with brinjal or eggplant and makes a good accompaniment to rice or idly or dosa.
If you are a brinjal lover like me than do try this out!
Ingredients Required :
Coconut oil - 2 tblsp
Channa dhal - 1 tblsp
Urad Dhal - 1 tblsp
Red chilli - 3
Pepper - 1 tsp
Mustard seeds - 1 tsp
Hing - pinch
Salt - to taste
Big Brinjal -1 or small - 6-8
Tamarind - 1 tsp

How to make:
In a pan, add the oil and when hot add the mustard seeds.
When it splutters add the dhals, chilli, pepper and hing.
Saute till golden brown.
Add the chopped brinjal with the skin, tamarind and season with salt.
Give it a toss and close the pan.
Cook till the brinjal is well cooked.
Allow to cool down and grind to a paste.

Notes:
Instead of cooking the brinjal you can also cook the brinjal directly on the flame so you would get a little charred flavor.
