Almond Gobi Masala - No Onion No Garlic - Vegan

This is a simple recipe with no onion no garlic and makes a great accompaniment with rice or roti.
This is a vegan recipe and uses almond flour as the base with spices.
Serves 4
Ingredients Required:
Gobi, cut into florets - 1 head
Tomato - 2 or 3
Oil - 2 tblsp + 1 tblsp

To grind:
Ginger - 2 inch piece or 1 tblsp paste
Almond flour - 1/4 cup
Turmeric powder - 1 tsp
Chilli powder - 1 tsp
Cumin powder - 1 tsp
Coriander - 1 tsp
Salt - 2 tsp
Kasturi Methi - 1 tsp
Garam masala - 2 tsp

How to make:
In a pan add 2 tblsp oil and saute the gobi florets till golden brown. They should still be crunchy and not fully cooked else will turn mushy.
Saute in high for around 5 minutes and then set aside on a plate.
Blend the almond flour with all the spice and salt with 1/4 cup of water to a smooth paste.
In the pan heat the tblsp oil and when hot saute the tomato till they are well cooked and mushy.
Add the ground spice paste and saute till the oil separate.
Add 1/4-1/2 cup water and bring to a boil.
Add the fried florets and toss well.
Garnish with chopped cilantro and serve with rice or roti.

Notes:
You can boil the florets till partially cooked instead if sauteing them.
Instead of almond flour you can use almonds or cashews soaked in water for 10 minutes.
Add the water to sauted spice mix according to the desired consistency. The above recipe does not have any gravy.
You can also add coconut milk or cream to make it gravy consistency
