Blueberry Muffins make a great breakfast and on the go for busy mornings. It is simple to make and is a one bowl recipe.
Use fresh blueberry for best taste, frozen works as well but do not thaw them.
Ingredients Required:
All purpose flour - 2 cups
Sugar - 1/2 to 3/4 cup
Baking powder - 1 tblsp
Baking Soda - 1/4 tsp
Salt - pinch
Blueberry -1 cup
Vinegar - 1 tsp
Buttermilk - 1.5 cups
Oil/butter - 1/4 cup
Vanilla extract - 1 tsp
How to make:
Preheat the oven to 350.
Prepare the cupcake tray by lining with cupcake liners.
Toss the blueberry in a tsp of flour and set aside.
In a mixing bowl, add all the wet ingredients with sugar and mix well till the sugar dissolves.
Sieve in the dry ingredients and fold in the batter till no lumps are there.
Add in the blueberry and give a gentle fold.
Fill up the cupcake tray and bake for 15 minutes or till well done.
