Gobi Paratha

Paratha made with grated cauliflower and flavored up with spices. Serve with raita and pickle to complete the meal. Makes a great lunch box menu.

Ingredients Required:
For the dough:
Wheat flour - 1.5 cups + 1/4 cup for dusting
Salt - 1/2 tsp
Oil - 1 tblsp
Water 1/2 cup

For the filling:
Cauliflower - 1 cup finely chopped or grated 
Salt - 1 tsp
Turmeric powder - 1 tsp
Cumin powder - 1 tsp
Coriander powder - 1 tsp
Garam masala - 1 tsp
Cilantro - 2 tblsp finely chopped
Green chilli - 1 Finely Chopped

Oil/ghee - 2 tbslp

How to make:
In a mixing bowl add the wheat flour, salt and oil. Mix well.
Slowly add in the water and knead to a soft pliable dough. Set aside closed.

For the filling:
Squeeze all the water out of the grated gobi.
Take a bowl and add all the ingredients under the for the filling.
Mix well.

Divide the dough into 4 equal balls.
Divide the filling into 4 equal portions.
Take a ball of dough and dust some flour.
Roll out into a small disc. In the center place the filling.
Slowly combine the corners of the dough together on top and pinch.
Make a ball and dust with flour.
Roll out into a thick circle. Do not press hard as the filling might come out.

Place on a hot tawa, and cook on medium heat till bubbles come one one side. Flip and apply ghee. Flip again and apply ghee. Cook till brown spots appear on both sides.
Serve hot with yogurt and pickle.

Notes:
You can also stir fry the filling and cool completely and the. Use as a filling.
Make sure that the gobi does not have any water content else the filling will come out when you roll it out.
You can grate the gobi, finely chop or even run it coarse in a blender.
