Methi Thepla

This is a type of Indian bread with fresh Methi leaves and wheat flour enhanced with spices. Serve with a cup of bowl of curd and pickle to complete the meal.

Makes 8-10
Ingredients Required:
Wheat flour - 2 cups
Besan / Bajra - 1/4 cup (optional)
Fresh Methi leaves - 1 cup, roughly chopped
Salt - 1 tsp
Turmeric powder - 1 tsp
Chilli powder - 1 tsp
Ginger paste - 1 tblsp
Cumin seeds - 1 tsp
Ajwain seeds - 1 tsp
Curd - 1/4 cup
Water as needed
Oil/ghee - to cook

How to make:
In a large mixing bowl take all the drt ingredients and mix well.
Add in the Methi leaves and mix.
Add the yogurt and mix .
Slowly add in the water and knead to a soft pliable dough. Knead for a couple of minutes.
Smear with a tsp of oil and set aside.
Heat a tawa on high and when hot reduce to medium heat.
Divide the dough into 8-10 equal balls and roll them out like roti.
Place on the hot tawa and when you see bubbles on top, flip.
Apply a little ghee or oil and drop again.
Apply ghee or oil on the other side and flip again.
You should have brown spots on both the sides.
Remove from tawa and serve hot with yogurt and pickle.
