Mor Kootu

This is a Kootu that is made with vegetables like white pumpkin, dudhi or chayote with a base of yogurt and coconut.
Serves 4
Ingredients Required:
Vegetable - 2 cups chopped into small cubes (pumpkin, chayote)
Channa dhal - 2 tblsp
Yogurt - 1 cup
Coconut - 1/2 cup
Green chilli - 2
Salt - 1 tsp
Coconut oil - 1 tbslp
Mustard seeds - 1 tsp
Curry leaves - few
Hing - pinch

How to make:
In a pan add 1/2 cup water and the channa dhal and vegetable. Close and cook till well boiled.
Blend the yogurt, coconut and green chilli to a fine paste.
Drain the water if any from the vegetable.
Add the blended paste and 1/4 cup water to bring to a desired consistency.
Bring to a light boil and switch of the flame.
In a small pan add the oil and when hot add the mustard seeds, allow to splutter. Add the hing and curry leaves.
Add this to the Kootu along with salt and mix well.
Serve with rice.
