Very similar to the rava upma, rava Kichidi as the name states is also made out of rava/sooji/semolina but enhanced with spices for the extra flavor and color.
Pair this up with some sambhar or coconut chutney to make a wholesome breakfast or any meal.
Ingredients Required:
Rava/sooji/semolina - 1 cup
Onion - 1 finely chopped
Tomato - 1 finely chopped
Ginger - 2 tblsp finely chopped
Green chilli - 2, roughly chopped
Ghee - 2 tblsp
Coconut oil - 4 tblsp
Salt - to taste
Sugar - 1/2 tsp
Hing - 1 tsp
Mustard seeds - 1 tsp
Curry leaves - few
Cilantro - finely chopped for garnish
Cashews - 1/4 cup
Garam masala - 1 tsp
Water - 2.5 cups
Other optional vegetables to add:
Potato - 1/2, cubed
Carrot - 1 , finely chopped
Bell peppers - 1/2, finely chopped
How to make:
Heat the coconut oil and when hot add the mustard seeds. Allow to splutter.
Add the curry leaves, hing, onion and ginger.
Saute for 2 minutes and then add the tomato.
Saute for 2 minutes and then add other veggies of your liking along with salt and sugar.
Add the rava and saute till the raw smell goes away.
Boil water in another pan.
Pour the boiling water in the rava mix along with turmeric.
Mix well so no lumps are formed and close the lid and allow to cook for 2 minutes on low heat.
Open the pan , sprinkle the garam masala and cilantro.
Drizzle the ghee and close to cook for another 2 minutes.
Open the pan give a final mix and scoop onto plate.
Serve with sambhar and chutney.
