A simple variety rice with tomato and some spices. Makes a great lunch box dish when served with raita or yogurt.
This is a no onion no garlic recipe but feel free to add them as per your liking.
Serves 2
Ingredients Required:
Rice - 1 cup
Tomato - 4, finely chopped
Ginger - 2 inch piece, finely chopped
Green chilli - 1
Red chilli - 1
Turmeric powder - 1 tsp
Kashmiri Chilli Powder - 1 tsp
Fenugreek powder - 1/2 tsp
Oil - 2 tblsp
Mustard seeds - 1 tsp
Hing - 1/2 tsp
Salt to taste
Curry leaves - few
How to make:
Cook the rice with 2 cups water, and then separate the grains so they do not stick. Set aside to cool.
In a pan, add the oil and when hot add the mustard seeds and allow to splutter.
Add the ginger ,curry leaves, hing, chilli and tomato.
Saute for a few minutes and then add the turmeric powder, fenugreek powder, chilli powder and salt.
Saute for 10 minutes till the tomatoes are well cooked and the oil separate.
Add the rice and gently mix so well coated.
Garnish with chopped cilantro and serve with raita of your choice.
