Vegan Coconut Cake

Fluffy vegan cake filled with coconut flavor. Makes a great tea or coffee time snack or can be frosted for a cake. I chose to bake this in a loaf pan and not glaze or frost it. Just garnished with some coconut flakes.
This is a one bowl recipe meaning all you need is one large bowl and a whisk it spatula to make this bake!

I like to use mini aluminum pans for take away and makes great gifts as well.

 
Makes a big loaf pan, or 2 - 8 inch pans

Ingredients Required:
Sweetened Coconut flakes - 2 cups + for garnish
All purpose flour - 2.5 cups
Sugar - 1 cup
Coconut milk - 1 can
Vanilla - 1 tsp
Coconut oil - 1/2 cup
Salt - 1 tsp
Baking soda - 1.5 tsp
Vinegar - 1 tblsp

How to make:
In a large bowl add all the dry ingredients and mix well such that the coconut flakes are well coated with flour.
Add in all the wet ingredients except vinegar and mix well.
Add the vinegar and give a final mix.
Pour in a well greased pan and garnish with coconut flakes if you would like.
Bake at 350. Time depends on the size of your pan.
8 inch - 30-40 minutes
Loaf pan - 60 minutes
Cupcakes - 20 minutes
Prick with a toothpick and when it comes out clean the cake is done.
Let it cool to room temperature and then slice and serve.

Notes:
Use thinly sliced coconut flakes.
If using unsweetened, then increase the sugar by 1/4 to 1/2 cup.
Do not over mix the batter, just mix enough to have no lumps.
