Vegetable Au Gratin

Baked vegetables in creamy sauce makes a perfect lunch or dinner dish. Can be made with vegetables of your choice.
Serves 4-6
Ingredients Required:
Vegetables - 6 cups ( mix of chopped potato, carrot, beans, peas, broccoli, cauliflower, zucchini)
Olive oil - 1 tblsp
Salt - 1 tsp

Butter - 3 tblsp
All purpose flour - 3 tblsp
Milk - 3 cups
Salt - 1 tsp
Pepper - 1 tsp
Nutmeg - 1/2 tsp

How to make:
Chop all the vegetables to bite size pieces.
Heat oil in a pan and saute all the vegetables for few minutes till partially cooked with salt.
Set aside.
In another pan, heat butter and when melted add the flour.
Saute till raw smell goes and then slowly add milk in batches and whisk till you get a lump free mixture.
Add salt pepper and nutmeg.
Cook for 5 minutes with continuous stirring till it thickens a little.
Add 1 cup cheese and mix till it melts.
Mix the white sauce with the vegetables.
Pour into a baking pan and top it with the remaining cheese.
Bake for 20 minutes and then broil till brown spots appear.
Serve hot with a slice of bread.

Notes:
Use vegetables of your choice. You can also add spinach directly to the mix without sauteing.
