Though the sound of it seems fancy and looks difficult, it is very simple to make and makes a healthy snack or appetizer.
This is our usual order in any Thai restaurant and tastes divine with peanut sauce.
You can get the rice wraps in any Thai or asian supermarket. They are usually with the other rice products and are available in circle or square. Any shape works well. Get a bigger one so it is easy to wrap and make a roll.
The main part of making this is slicing the vegetables in the appropriate shape. Everything has to be chopped in matchstick sizes, thin and long.
Big Rice wraps - 5
Carrot - 1 , chopped into matchsticks
Zucchini - 1, chopped into matchsticks
Tofu - 1 block
Bell pepper - 1, chopped into matchsticks
Basil leaves - 5, big
Mint leaves - 10, finely chopped
How to make:
Slice the tofu into big cubes and either steam them for 5 minutes or pan fry them till golden brown.
Cool to room temperature and chop into thin strips.
Have warm water in a plate and soak the rice papers in the water for a minute till soft.
Gently take them out and place on a working surface.
Place a basil leaf in the middle and place some carrots, zucchini, bell pepper, tofu and mint.
Tightly wrap them as you would roll a burrito.
Slice them into half.
Repeat this for all the wraps.
Serve with peanut sauce.

Notes:
Make sure the wrap is tightly rolled.
You can place whole or finely chopped basil leaves.
You can use other vegetables of your choice like cabbage, lettuce, cucumber.
You can use rice noodles and sprouts as filling.
