Gobi Manchurian with fried rice is a family favorite. And since I recently got an airfryer tried frying the gobi in that, and I must be honest I did not find any difference.
Pair it up with some simple fried rice and you are all set for a delicious meal!
Ingredients Required:
Gobi 1 small head- chopped into florets
Salt - 1 tsp
For the batter:
All purpose flour - 1/2 cup
Rice or corn flour - 1/4 cup
Chilli powder - 1 tsp
Salt - 1 tsp
Water - as needed
Fresh ground pepper - 1 tsp
Manchurian sauce:
Sesame oil - 2 tblsp
Spring onions - finely chopped, greens and whites separated
Garlic - 2 tblsp finely chopped
Ginger - 2 tblsp finely chopped
Soy sauce - 2 tbslp
Ketchup - 2 tblsp
Salt - as needed
Chilli sauce - 2 tsp
Water - as needed depending on your preferred consistency
How to make:
Boil water in a large pan with salt.
When it comes to boiling consistency drop the florets, switch off the flame and set aside closed for 10 minutes.
This will partially cook the florets and remove any dirt.
Strain and set aside.
Batter:
Mix all the ingredients under the batter section and slowly add water to make a thick paste.
It should be thicker than idly batter.
Drop the florets and coat well with you fingers.
Turn on the airfryer and place them on the plate and spray some oil so it does not stick.
Air fry for 10 minutes and then toss the florets and air fry for another 8 minutes.
Adjust the time depending on your air fryer by checking in between.
If required repeat in batches for all the florets and set aside.
Manchurian Sauce:
In a large wok, heat oil.
When hot add the whites of the onions, ginger and garlic.
Saute in high heat for a minute.
Add the soy sauce, ketchup and chilli sauce.
Saute for a minute.
Season with salt and bring to a boil. The sauce would thicken up.
If you would like a dry consistency, just add 2 tblsp of water and toss in the fried gobi for a minute on high heat and serve immediately garnished with the spring onions green.
If you would like a gravy consistency, mix 1 tsp of corn flour to 1/2 cup water and add this to the sauce.
Bring to a boil and add the gobi florets. Toss for a minute and serve immediately garnished with greens.
Notes:
If you don't have an airfryer, you can :
1. Pan fry the florets with minimal oil till they become golden brown. This will taste good but will not be crunchy.
2. Deep fry using oil. Double fry for restaurant style and longer crunchiness.
3. Bake in the oven at 400 for 15 minutes by flipping in between.
