Kesar Peda with Ricotta Cheese

Pedas are traditional Indian sweets made with milk and flavoring. Traditional method of making them is by boiling the milk till it thickens and reduces. This is a short cut method using Ricotta cheese and milk powder.
I have used cookie press for the impressions on top of the Peda. You can use Peda maker or simply just make a ball and flatten them.
These take less than 10 minutes to make.

Makes 20
Ingredients Required:
Ricotta cheese - 1 cup
Milk powder - 1.5 cup
Sugar - 1/2 cup
Butter - 1 tblsp
Ghee - 1 tsp
Saffron - few strands soaked in a tblsp of milk
Saffron color - pinch (optional)


How to make:
In a pan add the tblsp of butter on medium heat.
Add the ricotta cheese and sugar and keep stirring till the sugar melts into the ricotta and there are no lumps.
Add the milk powder, saffron soaked in milk and food color and keep stirring till the whole mixture comes together.
It took me 5 minutes to get the mixture together without sticking at the bottom.
Add ghee, and give a final mix.
Remove on to a plate and let cool down to room temperature.
Take a tblsp of mix and make balls.
Roll them to a smooth ball with no cracks.
You can use a Peda maker or cookie stamp to make it flat with the impression.
If you don't have them, gently press between you palms.
