Masala Vadai

These are fritters made with channa dhal and spices and makes great appetizers or accompaniment to tea.

Makes 20
Ingredients Required:
Channa dhal - 1.5 cups
Red chilli - 4
Cinnamon - 1 stick
Curry leaves - handful
Cilantro - 1/4 cup finely chopped
Ginger - 1 tblsp, finely chopped
Onion - 1 regular size, finely chopped
Salt - to taste
Hing - pinch
Cumin seeds - 1 tsp
Oil - to deep fry

How to make:
Soak the channa dhal and red chilli for 3 hours.
Grind them coarse along with cinnamon. Do not add water. It is fine if some of the dhal is not ground and stays whole as it would add a crunch.
Add the cumin seeds, hing, curry leaves, cilantro, onion, salt. 
Give a final mix.
Heat oil on high and when hot reduce to medium heat.
Drop a small amount of batter to check the temperature of the oil. Once the batter dropped should sizzle and come on top.
Take lime size balls and flatten it between your palms.
Drop them in the oil and fry till golden brown.
Drain and serve with chutney of your choice along with tea.
