Carrot Ginger Soup - Instant Pot Recipe

Soups are an absolute delightful dinner during the winter days along with a side of toast. It is healthy, feel good, and easy to make. This recipe is made in the instant pot but can be easily made on the open pan or press cooker.

Serves 4
Ingredients Required:
Carrot - 8 big ones, peeled and chopped
Ginger - 2 tblsp
Onion - 1, chopped
Pepper - 2 tsp
Salt - 1 tsp
Butter - 1 tblsp
Vegetable stock - 3 cups

How to make:
Set the instant pot to saute mode and add the butter.
Add the onion and ginger and saute well.
Add the carrots, pepper , salt and vegetable stock.
Pressure cook for 4 minutes.
Release pressure and either use a hand blender to blend to a smooth texture or if using blender, cool down to room temperature and blend.
Strain the mix using a strainer.
Serve hot topped with some butter.
