Every other week I usually grind a big batch of dosa idly batter as it helps in making various dishes for dinner over the week. This is one such recipe that can be made with the dosa batter. You need a slightly sour batter for this recipe and hence I usually make this with the last batch of batter.
Very simple to make and I recently got a cast iron abelskiver pan which I absolutely love. Makes the paniyaram golden and crisp.
Ingredients Required:
Dosa batter - 4 cups
Onion - 3/4 cup, finely chopped
Ginger - 1 tblsp, finely chopped
Green chilli - 2 finely chopped
Salt - if required
Pepper - 1 tsp, freshly crushed
Cumin seeds - 1 tsp
Cilantro - 2 tblsp, finely chopped
Curry leaves - few, chopped
Hing - 1 tsp
Oil for cooking
How to make:
Mix all the ingredients except the oil. If required add water, but the batter should be thick.
Heat the paniyaram pan, and when hot add a tsp of oil in all the dents.
Add a ladle of the batter till it is 3/4the full.
Cook on medium heat to get golden brown color.
In a few minutes you will see bubbles on top.
Drizzle some oil on top and you will see the sides separate from the pan.
With help of a spoon or skewers flip the paniyaram to cook on the other side.
Cook for a minute and remove from the pan.
Repeat for all the batter.
Serve with chutney of your choice.
Notes:
You can add grated carrots and finely chopped bell peppers as well for some color.
