Milagodarai - Pepper Rice

This is a simple, tasty and healthy variety rice. Serve with Pachadi and some fryums and enjoy a simple lunch.
Serves - 4
Ingredients Required:
Toor dhal - 2 tblsp
Black Pepper - 2 tsp
Cumin seeds - 1 tsp

Rice - 1 cup
Salt - to taste

To season :
Ghee - 1 tblsp
Cashew - 2 tblsp
Sesame oil - 1 tblsp
Mustard seeds - 1 tsp
Urad dhal - 1 tsp
Channa dhal - 1 tsp
Curry leaves - few
Hing - pinch

How to make:
Cook the rice with two cups of water in an instant pot for 8 minutes or in a pressure cooker for 3 whistles.
Set aside, separate the grains and allow to cool.
In a pan, dry roast the toor dhal, pepper and cumin for a couple of minutes till you get a nice aroma. Set aside.
Grind to a coarse Powder when cooled down.
In a pan, add ghee and fry the cashews till golden. Set aside.
In the same pan, add oil and add the mustard seeds and allow to splutter. The. Add the channa dhal, urad dhal, hing and curry leaves. Fry till golden and set aside.
To the cooled down rice, add the powder, cashews with ghee and oil with tempering. Add salt and gently mix.
Serve with Pachadi and fryums of your choice.
