A tangy and sweet Pachadi made with the peel of oranges. This is my paati's signature dish and one of my favorite. I remember as a kid whenever I used to visit her she used to make this specially for me.
This Pachadi has all the flavors - tanginess from tamarind and orange peel, sweetness from jaggery and spice from the chilli. Make sure to choose this peels of oranges, mandarin oranges works the best.
This goes well with rice and sesame oil, curd rice or even with dosa and idly.
Ingredients Required:
Orange peel - 1 cup, cut into small piece
Tamarind paste - 1 tblsp
Green chilli - 5-8, cut into small piece
Salt - 1 tsp
Jaggery - 2 tblsp
Sesame oil - 1 tsp
To season:
Sesame oil - 1 tblsp
Mustard seeds - 1 tsp
Channa dhal - 1 tsp
Curry leaves - few
Hing - 1 tsp
How to make:
In a pan, add a tsp of oil and add the green chilli and orange peel. Saute till soft for a few minutes.
Mix the tblsp of tamarind paste with a cup of water and add this to the pan.
Add salt.
Allow to boil on medium heat for 10-15 minutes till the mixture thickens.
Add the Jaggery and allow to dissolve.
In a small pan, add the oil for seasoning.
When hot add the mustard seeds and allow to splutter.
Add the channa dhal, curry leaves and hing.
Add this seasoning to the Pachadi.
Allow to cool and store in air tight container.
Stays upto a week in the refrigerator.
Notes:
Select the peels from mandarin orange where the peels are thin.
You can add red chilli instead of green chilli.
Sesame oil gives a nice flavor, but if you don't have it you can add any other oil.
