Simple and delicious Pachadi made with coconut as the main ingredient. Serve it with any variety rice of your choice.
Ingredients Required :
Curd - 2 cups, well beaten
Coconut - 1/2 cup
Ginger - 1 inch
Green chilli - 2
Salt - 1 tsp
Sugar - 1 tsp
To season:
Oil - 1 tblsp
Mustard seeds - 1 tsp
Urad dhal - 1 tsp
Hing - pinch
How to make:
Grind the coconut, ginger and coconut with minimal water to a fine paste.
Whisk this well with the beaten curd and add salt and sugar.
In a small pan heat the oil. When hot add the mustard seeds and allow to splutter.
Add the urad dhal and hing and roast till the dhal is golden.
Add this to the Pachadi.
Serve with any rice variety of your choice.
