Tom Kha Soup is one of our most favorite soup when we go to a Thai restaurant. It is filled with flavors and is delicious. Fairly simple to make if you have all the ingredients.
Serves 3-4
Ingredients Required:
Spring onions - 1 bunch , finely chopped, whites and greens separated
Garlic - 1 tblsp , finely chopped
Ginger - 1 tblsp, finely chopped
Carrots - 2 , roughly chopped into 1 inch piece
Basil - 10 leaves, roughly chopped
Coconut milk - 1 can
Water 2 cups
Vegetable Stock - 2 cups
Soy sauce - 1 tblsp
Chilli sauce - 1 tblsp
Salt - to taste
Pepper - 1/2 tsp
Coconut oil - 1 tblsp
Lemon wedges
Optional ingredients to add:
Lemon grass - few stalks, chopped
Broccoli
Tofu - steamed
Zucchini
How to make:
In a heavy bottom pan, add the oil and when hot add the whites of the onion, garlic and ginger. Saute for a couple of minutes
Add the vegetables that you are adding and saute for a couple of minutes.
Add the water and vegetable stock.
Close the pan and allow to cook for 5-8 minutes till the vegetables are cooked.
Remove the lemon grass stalks if added at this stage.
Add the soy sauce, chilli sauce, salt and pepper.
Add the coconut milk. Bring to a boil.
Add the chopped basil leaves.
Garnish with the greens of onion and serve hot with a squeeze of lemon on top.
Notes:
Adding vegetables and tofu is upto your liking. Carrots are required, everything else is optional.
