Simple Tomato Soup made in Indian Style with no onion no garlic in an instant pot.
Tomato soup is one of my favorite starters and as a kid I will always order this when we go out to eat.
Though I have made it in instant pot, it can easily be made with a cooker as well.
Serves 4
Ingredients Required:
Tomato - 10, medium size, roughly chopped
Oil/butter - 1 tblsp
Whole black pepper - 1 tsp
Ginger - 1 inch piece
Chilli Powder - 1 tsp
Salt - 1 tsp
Sugar - 1 tsp
Cilantro - few stalks
Milk - 1 cup
To garnish:
Cream - 2 tblsp
Butter - 2 tblsp
Croutons
How to make:
Turn the instant pot to saute mode, add oil.
Add the tomato, ginger, Pepper, chilli powder, salt, sugar.
Pressure cook for 5 minutes.
Quick pressure release and add the cilantro.
Using a hand blender, blend to a smooth mix.
Strain using a stainer.
Mix in milk.
Serve garnished with cream, butter and croutons.
Notes:
If using pressure cooker, cook for 3 whistles.
If using onion and garlic, add it with the tomato and pressure cook.
Do not heat the tomato soup after adding milk, it might split due to the sourness of the tomato.
If after straining, it is not hot, heat it up again and the just add milk before serving.
Adding cream and croutons is totally optional.
