Recently posted on gobi manchurian made in airfryer. This is very similar to that as the sauce is the same. Instead of gobi florets, made vegetable balls and fried them in the airfryer. Goes well with noodles or fried rice.
Serves 4
Ingredients Required:
For the balls:
Cabbage - 1/2 cup , shredded or thinly chopped
Carrot - 2 tblsp, grated
Beans - 2 tblsp, finely chopped
Spring onions - 1 bunch, finely chopped both the green and white part
Garlic- 1 tblsp, finely chopped
Ginger - 1 tblsp, finely chopped
Salt - 1 tsp
Pepper - 1/2 tsp, crushed
Chilli sauce - 1 tblsp
All purpose flour - 2 tblsp
Corn starch - 2 tblsp
Oil spray
For the manchurian sauce:
Sesame oil - 2 tblsp
Garlic - 2 tblsp, finely chopped
Ginger - 2 tblsp , finely chopped
Spring onions - 1 bunch, finely chopped (keep the whites and green separate)
Soy sauce - 3 tblsp
Ketchup - 2 tblsp
Chilli Sauce - 1 tblsp
Salt - as required
Water - 2 tblsp
If making gravy:
Water - 1 cup
Corn starch - 1 tsp
How to make:
Vegetable balls:
Add all the ingredients under the vegetables ball section into a mixing bowl.
Mix well and make it lime size balls. If not sticking together, sprinkle some water to bring it together.
Heat the airfryer at 400F.
Spray oil on the plate and place the balls and spray oil.
Air fry for 10 minutes, turn the balls and fry for another 10 minutes.
Remove when golden brown.
Set aside.
Manchurian Sauce:
In a large wok, heat oil.
When hot add the whites of the onions, ginger and garlic.
Saute in high heat for a minute.
Add the soy sauce, ketchup and chilli sauce.
Saute for a minute.
Season with salt and bring to a boil. The sauce would thicken up.
If you would like a dry consistency, just add 2 tblsp of water and toss in the fried balls for a minute on high heat and serve immediately garnished with the spring onions green.
If you would like a gravy consistency, mix 1 tsp of corn flour to 1 cup water and add this to the sauce.
Bring to a boil and add the balls. Toss for a minute and serve immediately garnished with greens.
Notes:
If you don't have an airfryer, you can :
1. Pan fry the balls with minimal oil till they become golden brown. This will taste good but will not be crunchy.
2. Deep fry using oil. Double fry for restaurant style and longer crunchiness.
3. Bake in the oven at 400 for 15-20 minutes by flipping in between.
