Creamy Cauliflower Soup - Instant Pot Recipe


Simple and easy to make soup in your instant pot. It is filling and makes a perfect meal when had alone or serve with a slice of bread. 
Serves 4
Ingredients Required:
Butter - 1 tblsp
White onion - 1 , roughly chopped
Garlic - 3 cloves, roughly chopped
Cauliflower - 1 head, florets separate
Salt - to taste
Pepper - 1 tsp
Milk - 1 cup

To garnish: (optional)
Cauliflower Florets - 1/4 cup
Olive oil - 1 tblsp
I have used some parm crisps as well as a topper

How to make:
Set the instant pot to saute mode.
Add the butter and when hot add the onion and garlic. Saute for a few minutes.
Add the cauliflower Florets and the vegetable broth.
Season with salt and pepper.
Close the lid and pressure cook for 3 minutes.
Open the lid, blend to a smooth puree using a hand blender.
Add milk and serve hot.
For garnish:
In a pan, add olive oil and fry the small florets till golden brown.
Top it up on the soup.

Notes:
Using white onion ensures the white color on the soup and also adds a mild flavor.
You can add the cauliflower stocks along with the florets.
You can use cream for a more creamier version by using 1/2 cup in place of milk.
For vegan version, use coconut oil in place oil butter and almond milk in place of milk.
