Creamy Pasta and vegetables in Instant Pot

 This dish was made by my 8 year old, from cutting to platting. It is that simple. I have started teaching my son simple recipes to explore in the kitchen. This being one of them is such an easy recipe - dump everything in the Instant Pot and you are done in less than 10 minutes start to finish.

Ingredients Required:

Pasta - 2 cups (Rotelle, Penne or Macaroni)

Pasta Sauce - 2 cup

Water - 2 cup

Olive Oil - 1 tblsp

Cream Cheese - 3 tblsp (optional)

Salt - to taste

Crushed Pepper - to taste

Vegetables:

Carrots - 1 - chopped

Bell Peppers - 1/2 cup, chopped

Broccoli - 1 cup, florets


How to make:

Switch the Instant Pot to pressure cook mode and set it for 4 minutes.

Add the olive oil, vegetables  (everything except broccoli) and pasta.

Add the water and pasta sauce, season with salt and pepper as required.

Give a good mix and close the IP.

Once cooked, quick release pressure.

Open the Instant pot, add the broccoli and cream cheese, give a quick toss and close the pot and set aside for a few minutes.

Open and serve.

Notes:

Add broccoli at the end after cooking else it would over cook. Couple of minutes of steaming is perfect for the broccoli to cook.

Adding cream cheese is totally optional, you can substitute with any other cheese or cream or skip it altogether.
