Orange Cake with Pistachio & Cranberry

These are soft fluffy orange flavored cakes with the juice from fresh oranges. You can stop here or go on and throw in some cranberry and pistachio to boost the flavor. The combination of orange cranberry and pistachio is just heavenly and complement each other every well.
This make one loaf pan.
These makes great breakfast slices or bake it in a regular cake pan to frost or glaze.

I usually use my glass loaf pan to bake the cakes.
I also like to use mini aluminum pans for take away and makes great gifts as well.

Makes 1 loaf pan
Ingredients Required:
Baking powder- 1 tsp
Baking soda - 1/2 tsp
Sugar - 1/2 cup
Yogurt - 1/2 cup
Oil - 1/4 cup
Orange juice - 3/4 cup, freshly squeezed
Orange Zest - 2 tbslp
Pistachio - 3 tblsp + 2 tblsp , finely chopped


How to make?
Preheat the oven to 350 F.
Grease the baking pan with butter or oil and set aside.
In a mixing bowl, add the sugar and yogurt and whisk well.
Add the freshly squeezed orange juice and oil. Whisk well.
Sieve in the flour, baking powder and baking soda. Fold the mixture till well combined.
Add the orange zest, cranberry and 3 tblsp of pistachio.
Gently fold till the mixture is well combined.
Pour into the pan, tap a couple of times.
Garnish with the remaining pistachio on the top.
Bake for 30 minutes or till baked. Insert a tooth pick and it should come out clean.
Cool and then slice and serve.

Notes
Use freshly squeezed orange juice for the best taste.
Use thick yogurt if using home made.
