Thakkali Thokku - Tomato Pickle


I am a big fan of tomato Pickle or tomato Thokku. Usually make a big batch of it when the tomatoes are in season and when made properly and stored in the refrigerator stays for a long time. Thokku is a south indian style of pickle.

Green Apple Thokku
Gongura Thokku
Mango Thokku

This is very versatile and goes well  with plain rice with ghee or sesame oil, curd rice, roti and any type of tiffin item.

Ingredients Required:
Tomato - 20
Red chilli powder - 2 tblsp
Turmeric powder - 1 tbslp
Sesame oil - 1/4 cup
Salt - 1 tbslp

To season:
Sesame Oil - 1 tblsp
Hing - 1 tsp

How to make:
Chop the tomato finely.
In a heavy wide bottom pan, add a tblsp of oil and the tomato.
Close and cook till it becomes half the quantity and the water has dried up. Keep sauteing in between.
Add the turmeric powder and chilli powder and salt.
Mix well and keep cooking on open flame, adding the remaining oil in-between.
The Thokku should be reduce to 1/4th of the initial tomato used. 
Once fully cooked you should see the oil separate.
In another small pan add the oil and when hot add the mustard seeds and hing. Allow to splutter.
Season the Thokku.
Mix well and allow to cool down.
Store in an air tight glass container in the refrigerator.

Notes :
Use organic good quality tomato for the best taste.
You can chop the tomato with the peel. It adds a good texture for the Thokku.
Sesame oil provides the best results.
