Thavala Adai

Thavala Adai is a type of Adai dosa that is made with raw rice coarsly ground along with other spices. It is a bit of tedious process. Brings back fond memories of my childhood as this used to be a common dinner menu in our house. My mom still makes it regularly and the picture is actually her click along with her recipe.


Ingredients Required:
Raw rice - 1 cup
Toor Dhal - 1/2 cup
Channa dhal - 1/4 cup
Urad dhal - 1/4 cup 
 Black pepper - 1 tsp
Cumin seeds - 1 tsp
Salt - 1 tsp
Coconut - 3 tblsp, grated
Water - 3 cups
Sesame oil - 1 tblsp + for cooking

How to make:
Wash the rice and dry on paper towel for 20 minutes till dry.
Grind the rice, dhal, red chilli and pepper together till you get a coarse powder.
In a pan, boil 3 cups of water along with a tblsp of oil.
When boiling add the coconut, cumin seeds and salt.
Slowly add the powdered mixture and keep stirring the mixture would thicken in a few minutes. 
Close the pan and cook for 5 minutes on medium heat till mostly cooked.
Set aside and allow to cool to room temperature.
Heat a dosa pan, and brush oil on the pan.
Take 2 tblsp of the mixture and roll to a ball .
Gently pat to flat thick disc on top of a silicon mat or parchment paper.
Make a hole in rgt middle .
Place this on the hot pan and drizzle oil around it.
Cook on medium heat till light golden brown on both sides by flipping after a few minutes.
Serve hot.
