Yet another simple soup recipe that is made one pot in the instant pot. I love these dump and cook recipes as there are no additional steps and super fast to make. This makes a hearty dinner meal and serve with a side of bread for the extra carbs!
Serves 4
Ingredients Required:
Olive oil - 1 tblsp
Onion - 1, roughly chopped
Broccoli - 1 lb florets with stalks
Vegetable stock - 3 cups
Salt and pepper to taste
To garnish :
Green onions - finely chopped
Grated cheddar
How to make:
Set the instant pot in saute mode and add oil.
Add the onion and saute for a minute.
Add the broccoli, vegetable stock, salt and pepper.
Close the instant pot and pressure cook for 3 minutes.
Natural release of pressure, open and using a hand blender, blend to a desired consistency.
Serve hot garnished with cheese and spring onions.
Notes:
You can add cream if you would like a more creamier taste.
Adding the garnish is optional.
