Pistachio Ice Cream

Latest of my ice cream experiments is lovely colorful pistachio ice cream. This uses no artificial flavors or colors and is made with minimal ingredients. I always good making ice cream at home for 3 reasons, 1. Very simple and fast to make 2.you can make them with minimal ingredients (look at the ingredients list in store bought, even the best brand!) 3. They taste much better than store bought.
And no! You do not need an ice cream make to make them. Just a simple electric hand whisk and 10 minutes of your time is good enough to make a big batch of ice cream.

Ingredients Required:
Heavy whipping cream - 2 cups
Pistachio shelled - 1 1/2 + 1/2 cup (chopped)
Sugar - 1/2 cup
Whole milk - 1 cup

How to make:
In a blender, blend the sugar, milk and 1.5 cups of whole pistachio to a smooth paste. Set aside.
In a large mixing bowl, add the heavy whipping cream and start beating it with a electric whisk. Took me 4 minutes to reach stiff peak consistency.
Gently add in the pistachip milk mix around the corners and start to fold them in or you can run your electric whisk at low speed so it is well combined.
Add in the chopped nuts and fold gently.
Pour into a freezer safe container and freeze for 6 hours.
Serve with nuts on top!
