Chocolate Bars - no bake only chilling

This is a very easy recipe that can be customized to your liking. You can pretty much throw in what you have or like and whip this up. And the best of all it's a no bake recipe just requires chilling. But it needs to be stored in the refrigerator else will melt.




Ingredients Required:
Granola - 2 cups
Chopped nuts - 1 cup ( I used almonds, walnuts and pecans)
Cranberry/raisins - 1/2 cup

Chocolate chip - 1.5 cups
Coconut oil - 1/3 cup
Honey - 1/4 cup
Peanut butter - 3/4 cup
Instant coffee - 1 tsp

How to make:
Line a 8x8 baking tray with parchment paper.
Take the granola, nuts, craisins and raisins in a mixing bowl and toss well.
In another bowl, add the chocolate chips, coconut oil, honey, peanut butter and instant coffee.
Either melt it in a microwave in 30 second intervals or on the stove top using double boiler method.
Once you have a smooth texture, mix well and pour this over the dry mix.
Mix well.
Pour in the pan, tap and spread so it is even.
Freeze for 45 minutes or pop in the refrigerator for 1.5 hours.
Once set, cut into squares and store in the refrigerator.

Notes:
You can use any combination of dry mix as per your liking.
You can use chocolate chips or baking chocolate bars. Try to use unsweetened ones or dark chocolate as we are adding honey for sweetness, else skip the honey.
