This is a very simple and quick Upma to make with any Millets of your choice. I have made this with foxtail millet.
This is a perfect recipe if you are on a diet as it is low carb, gluten free and very good for diabetics.
Serves 2
Ingredients Required:
Millet - 1 cup
Coconut oil - 1 tblsp
Mustard seeds - 1 tsp
Channa dhal - 1 tsp
Green chilli - 2, slit
Ginger - 1 tblsp finely chopped
Hing - big pinch
Carrots - 1/4 cup
Peas - 2 tblsp
Cashews - few
Salt - to taste
Cilantro - finely chopped
Lemon - to squeeze before serving
How to make:
In a pan dry roast the Millets for a couple of minutes till a nice aroma comes. Set aside.
In the same pan, add the oil and fry the cashews till golden. Set aside.
In the left over oil, add the mustard seeds and allow to splutter.
Add the channa dhal, hing, ginger and green chilli. Saute for a minute.
Add the carrot and peas and fry for a minute.
Add two cups of water and salt. Bring to a boil.
Slowly add in the Millets and mix well.
Close and cook for a few minutes on medium heat.
Serve garnished with cilantro, cashews and a squuze of lemon.
Notes:
You can add finely chopped onions and other vegetables of your choice.
